I don't know if SIG CS has the original manufacturing date for CPO pistols. They may only have the date when the pistol was certified. At least that is what I think I recall one member here related. Also be aware that with CPO SIGs you may not have the original slide or barrel because they may have been replaced during the refurbishing process so the date of manufacture may apply only to the frame. There is a serial number list on that other forum of the different SIG P-series pistols owned by members there with dates of manufacture, or in the case of some early P229s, which are made in the U.S. And don't have German proof date codes, the original purchase dates.
Most of the 'AL' prefixed P229s on that list don't have dates, but the 'AK's before are dated 2000, and the 'AM's are dated 2003-2009. I was going to guess your P229 was originally made between 2000 and 2003, but there is one P229 on that list with an AL5xxxx serial number dated Oct. You can also check the inside of the grip panels for a date clock. If the grips are the original ones (they may also have been replaced during the CPO process), the date clocks tell when the grip was made and can give you an approximation of the manufacturing date pf the gun.
